by Aaliyah
(belmont ma, 02478 )

Things you need:

1/4 cup unsweetened coconut powder
1/4 cup sugar
1/2 tsp. salt
1 c. milk
3 TBS shortening
1 yeast cake
1/4 c. lukewarm water
About 3-1/2 c. flour

Directions:

1. Mix the cocoa, sugar, and salt.
2. Add the milk, which has been scalded, and the shortening.
3. Let stand until lukewarm and add the yeast, which has been softened in lukewarm water.
4. Add enough flour to make a dough which can be handled and knead until smooth and elastic.
5. Let rise until doubled in bulk.
Cut down and knead again.
6. Shape into a loaf, place in a greased pan, and let rise until doubled in bulk.
7. Bake in a moderate (350 F) oven for about 1 hour.
8. Half a cup of walnut meats may be added to the dough at the second kneading.

Makes 1 loaf.

NOTE FROM NEGRIL TOUR GUIDE:
Aaliyah; Thanks so much for sharing. I can't wait to try it. Will go to Caribbean grocery store tomorrow for coconut power. When you sent recipe you called it cocoa power, but the only cocoa powder I know is chocolate. Email me: patricia@negril-tour-guide.com when you see this so we can talk about cocoa powder. Thanks, Pat
