Jamaican Beef Patty Recipe

To make this Jamaican beef patty recipe, you'll make the filling and patty pastry. (Makes 10 Patties)
Here we go:
Filling Ingredients:
12 oz Ground Beef
1 Tbsp Oil
Sprig of Thyme
3-4 Stalks Scallion (Chopped Fine)
1 Small Hot Pepper (Chopped Fine)
4 Slices of Bread
1 1/2 Cups Water
1 1/4 tsp. Salt
1/2 tsp. ground black pepper
2 egg yolks, beaten (or 1/2 cup milk)
First prepare the pastry.
Pastry Ingedients:
2 Cups Flour
1/4 tsp salt
1 Cup Grated Suet (Easier to grate when cold).
1 Cup Cold Water
Pastry directions: Sift flour and salt together. Cut in grated suet. Add water and mix to form dough. Knead for two minutes. Set aside and prepare filling.
Directions to prepare beef patty filling:
Fry the ground beef and sprig of thyme in oil until cooked (about 10-15 minutes).
Chop hot pepper finely--**Note these peppers are really hot. Take care to wear plastic gloves to chop or wash hands after chopping and before moving on.
Add chopped scallion and chopped hot pepper to cooked meat. Cook and stir for 5 minutes.
Put bread and water in blender. Allow to soak for a few minutes. Add salt and ground pepper to blender and blend.
Add blended mixture to meat mixture. Cook and stir for a few more minutes.
Discard the sprig of thyme.
Preheat Oven to 450 Degrees:
Roll prepared pastry 1/2" thick. Cut into 6" diameter circles--I use a small dish to make the pattern. Place pastry circles on baking sheets and divide the filling between the cirles.
Brush (moisten) the edges of pastry circles with water.
Fold over and seal using edges of fork tines.
Glaze with egg yolk or milk.
Bake patties on top shelf for about 25 minutes until golden brown. Serve warm.
