Jamaican Oxtail Recipe

Jamaican Oxtail Recipe

Prep Time: 30 Minutes
Cook Time: 6 hrs on high or 10 hrs on low, in crock pot.
Serves (4)
Note: This recipe can be made without a crock pot, but will require 8-10 cups of water to start and you'll need to keep an eye on it all day, adding water when needed. Cook all day for meat to soften. (see below)
1 pound beef oxtail, cut into pieces
1 large onion, chopped
1 green onion, thinly sliced
2 cloves garlic, minced
1 teaspoon minced fresh ginger root
1 teaspoon browning (optional)
1/2 - 1 scotch bonnet pepper, chopped (or pepper sauce) to taste.
2 tablespoons soy sauce
1 sprig fresh thyme, chopped
1/2 teaspoon salt
1 teaspoon black pepper
2 tablespoons vegetable oil
1 1/2 cups water
1 can broad beans
1 teaspoon pimento berries or peppercorns
1 tablespoon cornstarch
2 tablespoons water
If desired, wash oxtail in vinegar and lemon juice.

1.Toss the oxtail with the onion, green onion, garlic, browning, ginger, pepper, soy sauce, thyme, salt, and pepper. If desired, allow seasonings to soak in by refrigerating overnight or a least a few hours.

2.Heat the vegetable oil in a large skillet over medium-high heat. Remove onion pieces and set aside (to use later) before browning the oxtail in a skillet (about 10 minutes).

3.Place the browned oxtail, onions, water and pimento berries into crock pot. Cook on high for 6 hours or low for 10 hours.

4.Dissolve the cornstarch in 2 tablespoons water, and stir into the simmering oxtail. Add broad beans. Cook and stir a few minutes until the sauce has thickened, and the broad beans are hot.

Serve over rice! Watch out for pimento berries!

No broad beans? -- try adding baby carrots and potato quarters in step 3 (along with onions, water and pimento berries).
No crock pot? -- try it the old fashioned way...
Use 8-10 cups of water and put in heavy pot with lid on stove top. Simmer almost all day to soften the meat,the complete step 4!
